Biscotti al Latte

Nonna Carolina Vinciullo

Ingredients
10 eggs
3 cups sugar
1/2 cup milk
1/2 cup oil
250 grams butter (melted)
Vanilla extract
Grated lemon rind
Some ground cinnamon
2 kilograms sifted self-raising flour – or as much as it takes

Method 
Whisk eggs in mixer bowl until at top of bowl.

Gradually add sugar and continue to whisk.

Add some ground cinnamon and continue to whisk.

Add oil.

Add melted butter.

Add milk last.

Add lemon rind.

Finally whisk a little more.

Remove bowl from mixer.

Gradually add enough sifted flour to bring it together.

Tip out onto floured surface and continue to add flour until the correct consistency.

Prepare biscuit machine, or roll out by hand as preferred.

Cut up small pieces of mixture and put on a floured plate.

Pass through machine, place on lined oven sheets.

Bake at 170 degrees two trays at a time until golden.

Cool and store in airtight containers.
